Tiramisu, meaning "pick me up", "cheer me up" or "lift me up" is a popular coffee-flavoured Italian cream dessert. Making this quick eggless & alcohol free tiramisu is pretty simple.
Tiramisu Recipe is made of ladyfingers dipped in coffee, layered with a whipped mixture of heavy cream, sugar, espresso and mascarpone cheese and flavoured with cocoa and ground coffee.
This quicker version isn't less delicious, and I find reasons to make it all the time. With the filling being eggless and liquor free, the dessert is much quicker to put together.
This was just marvellously delicious. It was the kind of dessert that made my kids to take the whole dish and a spoon and hide away in the bedroom where no one can see them slowly devour and enjoy it all.
The mascarpone, makes a thick yet airy mixture when it comes together with whipped cream. If you want a richer filling, you can add more mascarpone (1/2 - 1 cup). if you want lighter filling, you can add more whipping cream (1/2 - 1 cup).
Lady fingers, are low density, dry and sweet sponge Italian biscuits roughly shaped like a large finger. They are principle ingredient in many Italian dessert recipes and for tiramisu.
Secret Ingredient:
Corn Starch, adding 1tablespoon of corn starch for 1 cup of heavy cream just before you whip it. The starch will absorb some of the liquid in the cream, making a firmer and more stable whipped cream. This will provide additional structure when you fold in the mascarpone cream, preventing the final cream from becoming watery.
Whipping cream using a blender version, I have always been a fan of doing things the quick and easy (lazy) way. Stir ingredients together in a blender/mixer jar and blend for 15-30 seconds, in case if you are using hand blender- moving the blender up and down to be sure that all the cream gets mixed, until soft peaks form. Thats it you are ready with your whipping in less than a minute to use it in the recipe.

Ingredients and method for making coffee/espresso:
Ingredients:
Instant/espresso coffee powder - 2 tsp
Sugar - 2 tsp
Hot water - 1 cup
Method:
1.) Add hot water,coffee powder and sugar to a bowl and stir until sugar dissolves, leave it aside and let cool completely.
Ingredients for filling:
Heavy / Thickened cream - 100ml
Corn starch - 3/4tsp
Mascarpone cheese - 100g
Caster sugar - up to 40g
Espresso/instant coffee - 2tsp
Sponge fingers - 10
Cocoa powder for sprinkling
Ground coffee powder for sprinkling
Method for filling:
1.) While coffee is cooling, whip heavy cream+corn starch to stiff peaks (around 1min on high speed), be careful not to over beat.

2.) In a separate bowl mix mascarpone cheese+sugar+esppresso( take out 2tsp from your brewed coffee and use it here). Stir mixture until smooth and creamy.

3.) Gently fold in the mascarpone mixture into the whipped cream and set aside.

Assembling:
1.) Dip sponge fingers in coffee one by one, for about 2-3 seconds each and squeeze it little to remove excess coffee from it and immediately place the fingers into a square dish to form one single layer (break some in half if you need to) as shown in the picture.

2.) Spread few scoops of whipped mascarpone cream filling mixture evenly on top.

3.) Dip remaining sponge fingers, as above, to form one more single layer, then spread few more scoops of cream mixture on top evenly again.

4.) Dust the top with sifted cocoa powder, ground coffee powder.

5.) Refrigerate for about 3 hours to firm up then slice and serve cold with your loved ones.
