Quinoa Lentil Dosa Recipe, how to make quinoa lentil dosa!
Quinoa Lentil Dosa, no rice added, you can prepare immediately after grinding, no fermentation, no baking soda, no eno and all you need to do is soak overnight, grind with onion and ready to prepare Dosa right away. Dosa is a kind of crispy, savoury pancakes which is so poplar in India. And this is another way to add quinoa in your daily diet. Doctors & nutrition experts always suggests that no skipping breakfast. And its always good to start your day with healthy breakfast. Here I am sharing my favourite Dosa recipe which is full of flavours and its important to start your day with this amazing protein packed dosas.
Quinoa Seeds/Grains
This powerful ancient grain has an excellent source of fiber, protein, iron, magnesium, vitamin B6 and folate B9, ideal for any health conscious diet.
Quinoa is cooked same as rice, like take quinoa : water(1:2) ratio. One cup of dried quinoa yields three cups of cooked quinoa.
It is so versatile because it can take on any added flavours just like rice. Its full of protein and a good substitute for non-meat eaters to get there daily protein.
Lentils, lentils have the second-highest ratio of protein per calorie of any legume after soybeans. In the Indian Subcontinent lentil curry is part of everyday diet, eaten with both rice, roti and can also be used to dosas.
I have used four types of lentils in this recipe. Grinding with onion and ginger gives that authentic taste. Methi seeds, incase if you want to add methi seeds, skip adding methi powder @ the time of grinding and add methi seeds at the time of soaking quinoa & lentils and that works well too.
Texture, crispy and tasty at the same time with full of flavours.
Serving Suggestions, tastes great with coconut chutney, mint chutney, ginger chutney or tomato chutney.

Prep time: 2 minutes
Waiting time: 6 to 8 hours / overnight
Cooking time: 3 to 4 minutes each dosa
Cuisine: Indian
Yields: around 10 dosas
Quinoa - 1 cup
Toor dal - 1/3 cup
Urid dal - 1/3 cup
Moong dal - 1/3 cup
Chana dal - 1/3 cup
Methi powder - 1/2 tsp
Onion - 1 large
Ginger - 1 inch piece
Salt to taste
Oil - 2 tbsp
Water
Method:
1.) Wash quinoa, lentils together soak overnight.

2.) Grind quinoa, lentils, ginger, methi powder, onion and make it as a smooth batter by adding little water to get it going. Now add more water until you get smooth and a bit thick consistency not like normal dosa batter. Time to add salt to batter and stir well.

3.) Now heat tawa or iron griddle grease with very little oil.
4.) Take enough batter with the ladle and spread it around evenly and fry it until golden colour, now flap it to another side and fry it for just 2 to 4 seconds and fold into half and now dosa is ready.
5.) Drop 2 drops of oil and spread it around and repeat making another dosa, repeat step 4.
6.) Serve hot with coconut chutney or tomato chutney or ginger chutney.
