Potato Chickpea Salad


Potato chickpea salad recipe is a kind of salad/chat that can be tossed together at a moments notice. Its simple yet still incredibly tasty and satisfying. Enjoy it as a light dinner or pact it up for lunch.
Easy potato chickpea salad recipe, keep things really simple, healthy and use home cooked chickpeas but you could definitely go for canned chickpeas instead. 
You can even make it ahead of time. The salad is great a few hours after preparing it. If you are hoping to make it a day in advance, you can just leave out the tomatoes, onions. Cut tomatoes, onions don't hold up well overnight, so make the salad without them then add some freshly cut tomatoes, onions just before serving. Ingredients:


Cooked chickpeas - 1/2 cup (I used home cooked)
Boiled potato - 1/3 cup (chopped)
Red onion - 3 tbsp(chopped)
Red tomatoes - 3 tbsp(chopped)
Lemon juice - 1 or 2 squeezes
Chat masala - 1/4 tsp (optional)
Green chillies - 1/3 tsp (chopped/optional)
Coriander leves - 1/2 tsp
Olive oil - 1 tsp
Paprika a pinch
Salt to taste

Method:






In a large bowl, combine all the ingredients. Taste and adjust seasoning, place on a nice serving dish and serve with your loved one.
