Homemade Sweetened Condensed Milk recipe


Sweetened Condensed Milk or Milkmaid



Condensed milk is cow's milk from which water has been removed.
Sweetened condensed milk or Milkmaid is a very thick and sweet product. Sweetened condensed milk is used in numerous dessert dishes in India and many other countries.
Egg substitute,  use sweetened condensed milk for sweet dessert recipes to replace egg. I mainly use condensed milk as egg substitute in making cakes & cookies. Here's is the homemade substitute for a can of sweetened condensed milk. Cake always comes out fluffy/light in texture, containing air and rises great.

Measurements, use 200g of homemade sweetened condensed milk for 1 cup of flour (200g-1cup). Once you make your own, you'll be so surprised at how easy it is!
Once made, store it in air tight container and leave it in refrigerator and thickening the milk will surely increases the shelf life but never get a chance to test the shelf life as mine was always consumed within a week of making it. so, do give it a try and let me know.

Step by step pictures and procedure on how to make sweetened condensed milk at home!


Prep time: 0mins
Cooking time: 1&1/2 hour
Cuisine: Indian


Ingredients:


Full fat milk - 1 litre
Brown sugar - 1 cup(225g)
Butter - 1tsp (optional)
Vanilla extract - 2 to 4 drops

Method:

1.) Add milk and sugar in a heavy bottomed pan/pot, bring them boil over medium heat.

2.) Reduce the heat and simmer for about 1&1/2 to 1 hour-45 minutes, until the volume is reduced by half. The mixture should be barely simmer and stir every 5 to 10 minutes or so to keep the milk from forming the "foam/thin layer" on top. I used brown sugar, so mine was turned yellowish.

3.) After 1&1/2 to 1 hour-45 minutes, once reduced to your satisfaction, off the stove and stir in the butter, vanilla essence.
4.) The mixture thickens as it cools down, so keep it in mind and depending on what final product your sweetened condensed milk will be used in, you will probably need to allow the mixture to cool completely before using.


Sweetened Condensed Milk with Honey & Sugar Version:

The colour of the outcome may changes, mine was in light brown in colour and tastes great. This works great as egg substitute. Honey has more sweetness than sugar and here is the recipe
Honey - 70g
Brown sugar - 60g
Full fat milk - 1liter
Rest of the procedure is same as above.

Sweetened Condensed Milk with White Sugar Version:

White sugar - 1cup (225g)
Full fat milk - 1 liter 
Rest of the procedure is same as above.
