Baked Zucchini Balls Recipe, how to make baked zucchini balls!
I recently made baked zucchini balls in my own way, and they were absolutely delicious and baked version so its a combo "taste & health in one ball" who can say no for these cute little balls.
This can also be called Zucchini "MEATBALLS". These meatless meatballs were a huge hit in my house. Made with finely grated zucchini, paneer / ricotta cheese, mashed chickpea, ground chia, chopped onion, mint & coriander leaves. This mint & coriander leaves gives that traditional taste then baked in the oven and ready to serve. My children are big fan of these and likes serving with homemade sour cream dip.
Paneer, its an Indian cottage cheese and which is fresh, tasty, healthy. Follow this link for homemade paneer.
Texture, these are perfectly round, golden brown, slightly crispy on the outside and warm, soft, moist and tasty on the inside. These balls taste great and healthy at the same time.
Serving suggestions, these zucchini balls are a great appetiser and can be served with cream sauce, ketchup, salsa, sour cream with herbs for dipping. These can make a great choice for lunch boxes or after school snack for children.

Prep time: 5 minutes
Waiting time: 10 minutes
cooking time: 30 minutes
Cuisine: Greek
Yields: 15 to 17 balls
Zucchini - 1 medium size
Paneer - 100g, finely grated
Chickpeas - 100g, boiled & mashed
Onion - 1 medium, finely chopped
Ground chia - 1tbsp/optional
Mint leaves - 2 tbsp, finely chopped
Coriander leaves - 2 tbsp, finely chopped
Olive oil - 1tbsp
Salt to taste
Black pepper powder to taste

2.) Add salt to grated zucchini and leave it aside for 10 minutes.
3.) Meanwhile preheat the oven @190 degrees. Place a baking/parchment paper on a baking tray and lightly grease the sheet with oil.

4.) You can squeeze the zucchini now, water content has increased. Place the grated zucchini on a muslin cloth or kitchen towel and squeeze out the excess water.

5.) Add all the above ingredients to a bowl and give it a good mix.

6.) Now take a little mixture, make a ball with your hands and place it on the baking sheet which we prepared early. Make rest of the balls and place them on tray. Now drizzle each ball with one drop of olive oil.

7.) Bake them @190 degrees for 30 minutes, by turning them around in half way.

8.) Baked zucchini balls are ready to serve.
