Zucchini Pickle


zucchini Pickle Reciepe:


Prep Time:5mins
Type:easy


Ingredients:

Fresh Zucchini - 2
Fresh Lemon - 4
Mustard powder - 3tsp
Methi powder - 1/2tsp
Chilli powder - 5 to 6tsp
Turmeric a pinch
Salt - 5tsp
Oil - 5tbsp
Mustard seeds - 1tsp
Asafetida - 1/4tsp

Method:


  • Wash zucchini and lemons ,dry them. Now cut zucchini into small pieces and take them into a bowl.
  • Now add lemon juice to the chopped zucchini ,toss them very well and rest it for at least 2hrs with giving few stirs in between.
  • Add all the spices like chilli pwd,mustard pwd,methi pwd,salt,turmeric then give a big stir .
  • Now take oil in a frying pan ,add mustard seeds,asafetida to the hot oil and off the flame when mustard seeds starts splatter then add this pope/tadka to the pickle and give a stir.
  • Zucchini pickle is ready  and enjoy with rice and ghee.
Tips:

  • Let it sit for a day and enjoy for better results.
  • Refrigerate immediately so that it can last for more than a month.
  • Chilli pwd and salt as per your taste (can increase or decrease the quantity mentioned).
