Eggless Orange Cupcakes

Eggless orange cupcake recipe, how to make eggless orange cupcakes!



Cupcakes can have endless variations and this is one of them - eggless orange cupcakes. After several trails I came up with a fool proof recipe which works great and it tastes absolutely delicious. The texture of the cake is very light and super moist. This cupcake recipe is very adaptive and you can replace the ingredient orange juice with blueberries or strawberries to get a totally different flavour.

Major ingredients used in this recipe are  cake flourhomemade sweetened condensed milk, orange juice, orange zest. Sugar is optional as sweetened condensed milk is already sweet but used in this recipe is homemade version so I know how much sweet it tastes and added little sugar. If you are using store bought condensed milk then I don't think you need to add sugar unless you have a sweet tooth😊.

Key ingredients in the recipe are cake flour & sweetened condensed milk.

Egg substitute,  use sweetened condensed milk  for sweet dessert recipes to replace egg. I mainly use condensed milk as egg substitute in making cakes & cookies. Here's is the homemade substitute for a can of sweetened condensed milk. Cake always comes out fluffy/light in texture, containing air and rises great. Prep time: 10 minutes 
Cooking time: 15 to 17 minutes

Yields: approx 12 medium


Ingredients:

Cake flour - 240g/ 2 cups
Sweetened condensed milk - 200ml
Softened unsalted butter - 100g
Brown/White sugar - 30 to 40g
Freshly squeezed orange juice - 60ml
Baking powder - 3/4tsp
Baking soda - 1/2tsp
Vanilla extract - 2 1/2tsp
Orange zest - 1/2tsp
Salt a pinch

Method:

1.) Preheat the oven to 150 degrees/350f for at least 15 minutes.

2.) Sift together the cake flour+baking powder+baking soda+salt.

3.) Mix butter+sweetened condensed milk together with hand mixer until both are well combined.

4.) Now add in sugar+orange zest and mix well.

5.) Add flour+orange juice+vanilla extract and mix it well until the flour is well incorporated but don't over mix it.

6.) Now place the cupcake liners in the cupcake tray and scoop the batter into the liners about 2/3rd full.

7.) Bake for 15 to 17 minutes or until a toothpick inserted in the centre of the cupcake comes out clean.
8.) Cool the cupcakes completely and enjoy them with your loved ones.
