Carrot Halwa / Gajjar Ka Halwa

Carrot halwa/Gajjar Ka Halwa Recipe:

Ingredients:


Tender carrots -2cups(peeled,grated)
Full fat milk - 2cups
(Sunflower,pumpkin)seeds,raisins - 2tbsp
Light brown sugar - 6 to 8tbsp
Whole cashews/kaju - 7 to 10
Green cardamom - 3(powdered)
Saffron strands/kesar - 3
Ghee - 2tbsp
Salt a pinch
Pepper pwd a pinch
Nutmeg a pinch(optional)

Method:

1. Add grated carrot and milk to a kadai or deep thick bottomed pan.

2. Bring the whole mixture to a boil on a medium flame and then simmer.
3. Keep on stirring this mixture often and scraping the sides to remove the evaporated milk solids and add the milk solids to the mixture.

4. The mixture should reduce by 75% and its time to add ghee+sugar+elachi powder.
5. Stir and continue to simmer on a low flame till the mixture starts to thicken and reduce even more.

6. When the mixture reaches your consistency like reduced much and you see a little milk then that's time to add cashews+dry fruits+saffron+salt+pepper+nutmeg.

7. Continue stir and simmer till the whole mixture becomes dry and milk should evaporate completely and you will see milk solids in the halwa mixture.
8. Carrot halwa is ready and serve hot or warm.
